Cranberry Pumpkin Balls

These are the perfect fall low calorie snack!
Dry Ingredients:
  • 1 3/4 cup uncooked oats partially processed in the food processor. About 70% broke down.
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • Few dashes of salt
  • 1/8 tsp ground cloves
  • 1/8 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin spice
Wet Ingredients:
  • 3/4 cup canned pumpkin
  • 2 egg whites + 1 whole egg
  • 1tsp Orange extract
  • 2tsp vanilla extract
  • Honey to taste (I used about 1/2 a cup)
  • 1/2 cup dried cranberries (optional…but SOO good!!!!!)

Method:

  1. Mix up the dry ingredients
  2. Mix up the wet ingredients
  3. Slowly incorporate the dry ingredients into the wet
  4. Bake in a mini muffin tim at 325 F / 160 C for 12 minutes
