Guilt Free Oatmeal Cookies

Oh my goodness…. Me & Chris were craving sweets last night. Instead of running to the store for a Ben & Jerry’s I decided to whip up something using things we already had in the pantry & something that we wouldn’t feel guilty for eating (although it was our cheat meal night). I litterally could eat my weight in these! They were so soft & sweet, perfect texture & naturally sweetened! I just started throwing things in the mixer, my measurements are guesstimated. Use your best judgement. Recipe in the comments. 

Ingredients
  • I Cup Rolled Oats
  • 1 Large Banana
  • 2-3 Tbsp Honey
  • 1 Free Range Egg
  • 1 Tsp Baking Powder
  • 1 Tsp Caramel Extract
  • 1/4 Cup Dried Cranberries
  • 2 Tbsp Dark Chocolate Chips
  • Flour to Thicken (If Required)

Method

  1. Blitz the oats in your food processor until about 1/2 broken down, set aside
  2. Mash the banana until completely pureed
  3. Add the honey, egg, baking powder and caramel extract and mix to combine
  4. Fold in the oats, cranberries and dark chocolate chips – if your batter is too runny, thicken with some flour
  5. Line a baking sheet with baking parchment and scoop one Tbsp size balls of the mix onto the baking sheet
  6. Bake in the oven at 350 F (175 C) for about 10 minutes until its not too gooey in the middle
  7. Enjoy!
