Ingredients

  1. 6 tablespoons of uncooked oats
  2. 3.5 tablespoons of unsweetened cocoa powder
  3. 1 tablespoon almond milk
  4. 2 egg whites (1 whole egg is fine)
  5. 4 tablespoons of mashed sweet potato
  6. 3 tablespoons natural peanut butter
  7. 1 tablespoon chopped walnuts

Method

  • Put all the ingredients (excluding chopped walnuts) into the food processor and blend until smooth
  • Pour the mix into an oven proof dish
  • Sprinkle with chopped walnuts
  • Bake at 350 Fahrenheit / 180 degrees Celsius for 12-15 minutes depending on how thick you spread the batter (it’s thick!)
  • Let them cool completely
  • Cut in to squares and remove them from the tin
  • My recommendation is to take two squares of brownie, put a dollop of frozen sugar free coolwhip in between the brownies and drizzle with sugar free caramel! Although these are great all by themselves also!
